14 - 2 cans dark kidney beans, drained and rinsed

# Instructions:

01 - Cut chuck roast into 1-inch chunks and season generously with salt and pepper. Heat oil in large pot over medium-high heat. Brown beef in batches, 4-5 minutes per side, until well-seared. Don't crowd the pot.
02 - In same pot, cook onions and bell peppers for 8-10 minutes until softened. Add garlic and cook 1 minute until fragrant. Scrape up browned bits from bottom.
03 - Add chili powder, cumin, paprika, and oregano. Toast 30 seconds. Add crushed tomatoes, tomato paste, and splash of broth. Scrape up remaining browned bits.
04 - Return beef to pot with juices. Add remaining broth and bay leaves. Bring to boil, reduce to low, cover and simmer 1.5 hours until beef is tender.
05 - Add kidney beans and adjust seasonings. Continue simmering uncovered 30-45 minutes until sauce thickens and coats the back of a spoon.
06 - Remove bay leaves and taste for final seasoning adjustments. Let rest off heat 10 minutes before serving to allow flavors to meld together.
